Bees and Honey

Bee hives have been located on our farm since 2018. They are currently being managed by Derek Haars from Northstar Apiaries in Northfield, MN.

The bees spend their days foraging for pollen and nectar from the fields, forests and prairies on our farm and in the surrounding area. While helping to pollinate our crops they also produce delicious honey that Derek harvests in the fall. The honey is lightly filtered and minimally heated (which aids in bottling) to preserve the pollen, enzymes and other compounds naturally found in raw honey.

The beehives are kept on the farm all year. Derek is careful to manage the bees in such a way that they have honey and pollen reserves and are healthy enough to survive our harsh Minnesota winters. Derek also raises his own queens so that his bees are as hardy and well adapted to our region as possible.

Honey from the bees raised on our farm is available as a CSA add on in the fall. Each year’s honey crop is slightly different and is an expression of the unique flower blooms the bees encountered in a given year.

Cover crops

Cover crops are an important tool for improving soil health on our farm. Planted in our fields between vegetable crops, they help prevent soil erosion and suppress weed growth. Legumes, like clover, peas, and vetch, can also improve soil fertility by fixing nitrogen from the air into the soil. All cover crops increase organic matter which in turn improves soil structure and water retention, critical for dealing with the periods of extended dry or wet weather that are becoming more and more common. Ultimately, healthy crops need healthy soils, and cover crops are how we feed our soil.

Natural Spaces

We are committed to leaving wild spaces on our farm. From unmanaged wetlands to prairie restorations, our farm provides a space for more than just cultivated vegetables. These areas create habitat for microbes, insects, birds and other wildlife. They are critical to the overall health of our farm as they provide balance against the pests and diseases that affect our crops.

In 2017 we planted a half acre of flowering native plants with the help of the Xerxes Society. This planting provides a diverse array of flower blooms throughout the growing season, creating a buffet of pollen and nectar that supports all kinds of pollinators in the area.

Solar

In 2023 we installed a 37.5 kW solar array, large enough to offset all of our farm’s electrical use. We believe that calling ourselves a sustainable farm requires that we take concrete steps towards addressing the climate crisis. Our tractors still burn fossil fuels, but this goes a long way towards reducing our farm’s carbon footprint.

Your Farmers

We are Anna Racer and Pete Skold and we own and operate Waxwing Farm.

We both came to farming from a wide variety of experiences. Anna's background is in Italian, customer service, and education while Pete's is in carpentry and chemistry. We met while working at YMCA Camp Widjiwagan in Northern Minnesota, leading wilderness trips for young people. 

From leading trips and spending long weeks in the wilderness, we both developed our land ethic and fell in love with working outdoors. For us, farming was a natural way to settle down and continue to live out our values. After working on other farms for a few years, we struck out on our own in 2011.

2024 will be our fourteenth growing season as Waxwing Farm

Farming provides us a way to share our passion with others. We love growing food, caring for our small piece of the world, and nourishing our community. We are proud to be your farmers.

Waxwing Farm is looking for motivated and hard-working individuals to join our farm crew for the 2024 growing season. We grow and supply vegetables for a 75 member CSA, 10+ restaurant accounts and multiple school districts. We are currently farming about 5 acres of produce plus three hoop houses.

Responsibilities: Our farm crew is involved in all aspects of vegetable production, from seed to harvest. Responsibilities include:
- Greenhouse work, transplanting, irrigation, weeding, and general plant care and maintenance.
- Harvesting, washing, grading and packing produce
- Hoop house work (planting, trellising, pruning, weeding, irrigating)
- Light tractor work (with experience)
- General farm upkeep
- Delivering produce

Qualifications: The ideal candidate will be self-motivated and organized, with an attention to detail and efficiency. Previous farm experience is a plus but not required. Crew members must be physically fit and should expect to work quickly and efficiently in all weather conditions. Employees must be able to work independently and with others. We seek someone that wants to work hard, eat well, and continue to learn and grow. Preference will be given to those who are interested in returning to work for multiple seasons. Opportunities to grow with our farm and take on more responsibility exist.

Timeframe and Hours: Our work season runs from April to late October/November. Typical work hours are Monday through Friday, 8am to 4:30pm with a 45 min unpaid lunch break (lunch provided 1 day a week). Work hours can vary with the weather, but full-time positions are 38-45 hours per week and part-time positions are 16-24 hours per week.

Compensation/Benefits: We value our employees. Pay from $15 to $17/hour, depending on experience. In addition, we provide hot lunch (one day/week) and good coffee (daily). Free produce and eggs available when in season. On farm accommodations provided for one full time employee, if necessary. We can assist with securing additional housing if need be.
